Sup Nui – Vietnamese Macaroni Soup

Ingredients

16 oz macaroni

2 lbs pork bones
-
10 cups water
-
1 small daikon, peeled and cut into big chunks

3 carrots, peeled and cut into chunks

1 small onion
-
4 cloves garlic, minced
-
1–2 green onions, chopped
-
2 tsp fish sauce, adjust to liking
-
2 tsp chicken bouillon
-
1 tsp sugar
-
Salt, to taste
-
Black pepper, to taste

Fresh cilantro, for garnish

Optional: fried shallots or chili for topping
Instructions

Parboil the pork bones: Bring a pot of water to a boil. Add the pork bones and parboil for a few minutes. Drain and rinse the bones under running water to remove impurities.

Prepare the pork broth: In a clean pot, add the parboiled pork bones and 10 cups of water. Simmer for 30–40 minutes, skimming off any foam.

Cook the macaroni according to package instructions. Drain and set aside.

Add vegetables: Once broth is ready, add onion, carrots, and daikon. Simmer until daikon and carrots are tender, about 10–20 minutes.

Prepare garnishes: Add minced garlic to hot oil, remove when golden brown. Repeat process for shallots.

Season with salt and black pepper to taste.

Serve hot, garnished with chopped green onions and cilantro. Optional: add fried garlic, shallots, or chili for extra flavor.
