Loaded Potato Soup
This Loaded Potato Soup is the ultimate cozy, creamy comfort meal. Made with tender potatoes, crispy bacon, sautéed onions, garlic, and a light yet rich broth, it comes together in one pot and tastes incredible without being too heavy.
Ingredients
- 6 medium russet or gold potatoes, peeled and diced (2 lbs)
- 4 slices thick cut bacon
- 1 tbsp avocado or olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 3 tbsp flour
- 4 cups low sodium chicken broth
- 1 cup unsweetened almond milk or low fat milk (or half & half for richer flavor)
- Salt and pepper, to taste
- Optional: 1/2 cup greek yogurt or light sour cream
Instructions

Cook the bacon: Cook bacon in a large pot until crispy. Remove with a slotted spoon and set aside. Leave 1 tbsp bacon grease in pot.

Sauté aromatics: Add diced onion to the pot and cook until softened, about 4–5 minutes. Add minced garlic and cook until fragrant, about 1 minute.

Make the roux: Sprinkle flour over the onions and stir for 1 minute to form a paste.

Add broth and potatoes: Gradually whisk in chicken broth until smooth. Add diced potatoes. Bring to a boil, reduce heat, and simmer uncovered for 15–20 minutes until potatoes are tender.

Mash and thicken: Use a potato masher to mash some of the potatoes in the pot, leaving chunks for texture. Stir in milk and simmer for 5 more minutes.

Finish: Remove from heat and stir in sour cream or greek yogurt if using. Season generously with salt and pepper. Top with crumbled bacon and serve.
