Ingredients
Spider Cupcakes
-
1 cup all-purpose flour
-
1 cup granulated sugar
-
1/2 cup unsweetened cocoa powder
-
1 tsp baking powder
-
1/2 tsp baking soda
-
1/4 tsp salt
-
1/2 cup milk (or any plant milk)
-
1/4 cup vegetable oil (or melted coconut/avocado oil)
-
2 large eggs
-
2 tsp vanilla extract
-
1/2 cup boiling water
Classic Buttercream Frosting
-
1 cup (2 sticks) unsalted butter, softened
-
4 cups powdered sugar, sifted
-
3 tbsp milk
-
pinch of salt
Instructions
1. Make the Spider Cupcakes
-
Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
-
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
-
Add milk, oil, eggs, and vanilla. Beat until smooth.
-
Carefully mix in the boiling water — the batter will be thin, but that’s okay.
-
Fill cupcake liners about 2/3 full. Sprinkle chocolate chips on top if using.
-
Bake 22 minutes or until a toothpick inserted in the center comes out clean.
-
Cool in pan 5 min, then transfer to a wire rack to cool completely before frosting.
2. Make the buttercream frosting
-
In a large bowl, beat butter with a hand or stand mixer on medium speed until creamy (2–3 minutes).
-
Add powdered sugar gradually, 1 cup at a time, mixing on low speed until combined.
-
Mix in a pinch of salt.
-
Add milk, 1 tablespoon at a time, until the frosting is light and spreadable.
-
Increase to high speed and whip for 2–3 minutes, until the frosting is fluffy and airy.
3. Serve Together
-
Frost each cooled cupcake generously with buttercream.
-
Using chocolate syrup, draw four lines across the frosting to create eight spider legs.
-
Place half of an Oreo cookie on top to form the spider’s body.
-
Add two candy eyes to the cookie to complete the spider design.
