Roasted Rainbow Carrots
These roasted carrots are sweet, caramelized, and full of flavor — all with just a few simple ingredients. They make the perfect everyday side dish and pair beautifully with chicken, fish, steak, or vegetarian meals.
Ingredients
- 2 lbs carrots, peeled
- 3 tbsp olive oil
- 1 1/4 tsp salt
Instructions

Preheat your oven to 400°F.

Peel the carrots and slice them into 1 1/2-inch pieces on a diagonal.

Toss carrots with olive oil and salt until well coated.

Spread in a single layer on a large baking sheet.
