Roasted Rainbow Carrots

Ingredients

  • 2 lbs carrots, peeled
  • 3 tbsp olive oil
  • 1 1/4 tsp salt

Instructions

  1. Preheat your oven to 400°F.

  2. Peel the carrots and slice them into 1 1/2-inch pieces on a diagonal.

  3. Toss carrots with olive oil and salt until well coated.

  4. Spread in a single layer on a large baking sheet.

  5. Roast for 25–30 minutes, flipping halfway through, until the carrots are tender and caramelized at the edges.
