Potato Taquitos

Crispy, cheesy, and absolutely addictive. These Potato Taquitos are perfect for snack time or a fun meal. Golden, flavorful, and ready to devour!

Ingredients

  • 2 lb russet potatoes

  • 1 tsp salt

  • ½ tsp each: smoked paprika, garlic powder, onion powder, black pepper

  • 2 cups cotija cheese

  • Tortillas

  • Cooking oil, for frying

Instructions

  1. Prep the potatoes: Peel and cut potatoes into chunks. Place in a pot of cold water, add a pinch of salt, and bring to a boil. Cook until fork-tender, then drain.

  2. Mash and season: Mash the potatoes and mix in salt, smoked paprika, garlic powder, onion powder, black pepper, and cotija cheese until well combined.

  3. Assemble the taquitos: Warm the tortillas (I wrap them in a paper towel and microwave 15–30 seconds). Fill each tortilla with the potato mixture, roll tightly, and secure with a toothpick.

  4. Fry to golden perfection: In a heavy-bottomed pot or pan, heat 1.5 inches of oil to 350°F (175°C) for shallow frying. Fry taquitos until golden brown, turning carefully away from your body.

  5. Drain and serve: Remove and place on a wire rack to drain excess oil, keeping them crispy. Serve warm!
