Chinese Silky Steamed Eggs

Ingredients

4 eggs

2 cups warm water

1/2 tbsp chicken bouillon

1/2 tbsp oil

1/2 tbsp salt

1 stalk green onion, chopped

White pepper, to taste
Instructions

In a wok, place a steam rack and add water. Bring to a boil, then reduce to a low-medium simmer.

In a bowl, whisk eggs with chicken bouillon, salt, and oil. Add 1/2 cup warm water and mix.

Gradually whisk in the remaining 1.5 cups of warm water.

Divide the egg mixture into ramekins. Sift the mixture to remove any bubbles.

Place ramekins on the steam rack, ensuring water comes up 1/3 of the way.

Steam for 8 minutes.

Garnish with white pepper and chopped green onions. Serve warm.
