Shrimp Ceviche

Ingredients

1 lb cooked shrimp, deveined and chopped

1/4 cup lemon juice

1/4 cup lime juice

1–2 roma tomatoes, chopped

1/2–1 small onion, chopped

1 bunch cilantro, chopped

1/2 avocado, diced
-
1 jalapeño, optional

Tostadas for serving
Instructions

In a bowl, combine lemon juice and lime juice.

Chop cooked shrimp into bite-sized pieces and marinate in the citrus juice for a few minutes.

Prepare pico de gallo: mix chopped tomato, onion, cilantro, and jalapeño (if using).

Combine shrimp with pico de gallo. Mix gently.

Add avocado chunks.
