Taiwanese Sesame Noodles

Ingredients

Wheat noodles

2 eggs

1/4 cucumber, julienned

2 cloves garlic, minced

1 stalk scallion, chopped

1 tbsp cilantro, chopped

Chili oil, for garnish
Sauce Ingredients

3 tbsp peanut butter
-
1 tbsp soy sauce
-
1 tbsp black vinegar
-
1 tbsp sesame oil
-
1 tbsp water
-
1 tbsp sugar

1 tsp salt
Instructions

Cook noodles according to package instructions.

Chop scallions, cilantro, mince garlic, and julienne cucumber.

Beat the eggs and cook in a pan over medium heat to create a circular omelet. Slice into ribbons.

In a bowl, combine peanut butter, soy sauce, black vinegar, sesame oil, water, sugar, and salt. Mix until smooth.

In a serving bowl, add noodles and pour the sauce over.
